Deo Optimo Maximo
Standing outside D.O.M., chef Alex Atala’s opus, looking up at the formidable, nearly 20 foot tall black door, it’s easy to get a glimpse of what this restaurant must look like to its competition.

Inside the glowing, art deco building, sitting in the spacious and earthy interior, it’s not difficult to see just how high the mark is for competitors. An acronym for Deo Optimo Maximo—God is optimum and maximum—D.O.M. is aptly named. Guests agree that Alex Alata is as bold with his dishes as his daring restaurant name.

The sounds, smells, and tastes are a furious-paced jungle safari through Brazil and the Amazon. Indeed, at the age of 12, Alata made his first trek into the Amazon with his parents, and his many forays across Brazil shine through in the medicanal herbs, refreshing flavors, and exotic Amazonian traditions that touch every entrée: crunchy black rice from Paraíba Valley; sweet and savory priprioca root; jambu, an herb that delivers an electric tingle to the tounge; and tucupi, a yellow liquid extracted from poisonous manioc, which must be boiled for 20 minutes to remove the poison and maximize the flavor.

All of the exotic and traditional dishes arrive A la Carte, as part of 4 and 8 course tasting menus. Guests may elect a sampling of juice and fruit essences to accompany each course; the perfect complement to the exotic spices and flavors.

Nominated seventh best restaurant in the world by S. Pellegrino’s list of the World’s Top 50 Restaurants and earning accolades from Brazilian and worldwide sources, D.O.M. not only rises above the competition, but soars above, living up to the namesake as the optimum and maximum place to eat in Brazil.
